Whole Wheat Cranberry Scones

Preheat oven to 375
Line a baking sheet w/ parchment or wax paper
You will need the following:
1 1/2 cups all purpose unbleached flour
2/3 cup ww flour
1/4 cup granulated evaporated cane sugar
2-1/4 tsp. baking soda
1/4 ts. sea salt
3 Tbsp butter cut into small pieces
1/4 cup fruit juice sweetened
dried cranberries
2 tsp grated orange rind
1 large egg, lightly beaten
1/2 cup fat free buttermilk
1 tsp confectioner's sugar

Combine the butter, flour, ww flour, granulated sugar, baking powder, baking soda, & salt in large bowl.  With a pastry blender, cut into the butter until the mixture is crumbly.  Add the cranberries & orange rind & stir w/ a fork until the dry ingredients are just moistened.  Gather the mixture into a ball, place on the baking sheet, & pat into 7-inch circle.  Cut into 10 one inch wedges w/ a knife dipped in flour.  Do not separate the wedges.  Bake until golden brown & when a toothpick inserted into the middle comes out clean.  20 min roughly.  Transfer to rack to cool, sprinkle Confectioner's sugar and enjoy!
